Lemon Blossoms

18 1/2 oz. pkg of yellow cake mix
3 1/2 oz. pkg instant lemon pudding mix
4 large eggs
3/4 c. vegetable oil

glaze:

4 c. confectioners sugar
1/3 c. lemon juice
1 lemon zested
3T. vegetable oil
3T. water

preheat oven to 350, spray mini mufifn tin with cooking spray, combine first four ingredients with mixer until smooth, fill each muffin tin about halfway with batter, bake for 12 minutes, let cool on cooling rack. Glaze- sift sugar into a mixing bowl, add lemon juice, zest, vegetable oil, and water and mix with a spoon until smooth, use fork and and dip entire lemon blossom into the glaze, then let set on wax paper. let glaze set for 1 hour, Store in a container with a tight fitting lid.
